After permitting our first brick and mortar installing baking equipment and enlisting friends to help with finish work we finally opened our doors to the public in January 2003. We repurposed a vintage donut case that we still use today. In the early days we had an eclectic mix of furniture and a rotating art wall. Tucked in the back of our bakery was our 1500 pound donut mixer, and a miniature office. All of our raw ingredients for making scratch made mix and glazes were carefully stacked.
In the early 2000’s we were baking and delivering 7 days a week round the clock. Our morning bakers would come in around 3 am to bake fresh donuts for our retail cafe. Then at 5:30 am the first baristas would arrive to season the espresso machine and get the cafe ready for customers. We would close around 5 pm then the evening bakers would get ready to bake for wholesale delivery for the following day. We delivered to Madison Market, Central Coop, PCC, Wholefoods, Caffe Vita, Cafe Fiore, Vivace and many more coffee shops some of which have come and gone. Our deliveries took place in the early mornings in the dark before most cafes were open. Then the cycle would happen all over again. Each day a new adventure or challenge accompanied by inspiration from our community.
Our neighbors started becoming regulars and we could anticipate their orders. Now twenty one years later we are so thankful that some of our original customers keep coming back. We love hearing your Mighty-O stories and hope to see you soon!
